Windows Contacts--Last Name, First Name, and Copy and Paste

Hey, how can I get Windows Contacts to list my contacts by last name, first name, as in

Gates, Bill


Also, since the only time I can see an entire contact listing is on Preview, how can I copy and paste all that text into another file? When I highlight it, I can't hit Copy.
