Getting rid of old updates

When microsoft installs a new update, why do they not take out the old ones
and how do I know which updates I can delete from my computer? I have tons
of them!

NB: If you delete an "old update," you will never, ever be able to uninstall
it, should the need arise.

Is there a way to keep Vista from nattering to me about the
ATF-cleaner's publisher not being verifiable? I only want to disable
the warning for *that* program.
