how contacts displayed on email

When I select a contact from my list it is displayed with the name of the
contact and their e-mail address on the outgoing e-mail. I am sure you used
to be able to change a display setting, in older versions of window, to show
only the information you wanted. I can't find this now. Is this option
still available with windows vista?

It only shows that way in the composition window, it is by design and can't
be changed.
