in the new windows mail how do I turn off the preview pain so I can deal with
spam more effectiveley?

View menu>Layout>disable preview pane.

Customise your toolbar and add the preview button, then you can toggle back
and forth as you wish, Rt click toolbar>customise.

Incidentally, the newer Windows Live Mail program automatically prevents
preview for junk e-mail messages. To be sure, spam messages that have
slipped through the spam filter will display in the preview pane if you normally
use the preview pane.
