uninstall ie8

If I uninstall ie8 will ie7 automatically reinstall itself.

That depends on what version of Windows you have, what service pack you
are at, and in what order you installed IE 8 and your service packs.

yes

that of course assumes you had IE7 installed

and sp3 was not applied after the installation of IE8


BTW: Do not use system restore!
